Harvest Goodies

This time of year can be so magical. Everywhere you look, changes are occurring. Leaves turn to that magical golden orange colour, and there is a chill in the air that coerces us in the comforts of herbal tea, good company, comfort food and fire places.

As we approach the Autumn Equinox, we begin to prepare for harvest. A few hundred years ago, that meant culling crops and gathering the last of all you had grown. Today we do not need to worry about harvesting as much. As we prepare for winter there are many ways in which we can do so, physically, spiritually and mentally.

Something I like to do this time of year is bake Harvest Cookies! Now unfortunately this harvest season I am unable to make them, but I would love to share my recipe with you! Now the great thing about these cookies, is that you can put basically anything in them! All kinds of seeds, seasonal berries, herbs, etc.

 

Here is what you will need:

1 cup of flour
1/2 cup of milk
1 tbsp baking powder
1 egg (can be replaced with either peanut butter or apple sauce)
2 tsps brown sugar
1/2 tsp salt
Coconut oil

(Makes about 6 cookies)

Extras: Add whatever you wish! Pumpkin seeds, lavender, sage, blackberries, etc

Mix all ingredients together in a bowl, and then place onto a baking tray that has parchment paper placed onto it. Create balls of the dough, about 3 inches big, and space them apart. With a fork dipped into a bit of coconut oil, gently press down on each ball so it becomes flat. You can sprinkle brown sugar on top, or grated cheese if these are savory. Bake in the oven for about 10-15 minutes at 350 degrees Celsius, and voila!

Serve warm, with some herbal tea, and share with friends and family!
